Aromatic Bark
Cinnamon's sweet, woody warmth comes from its volatile oil. Quills (rolled bark) preserve aroma best and are graded by length and appearance.
Quality Parameters
Volatile oil content, coumarin levels and moisture are key. Buyers in some markets specifically request lower-coumarin profiles for regulatory reasons.
Sticks vs Powder
Sticks suit beverage, mulling and retail; powder is supplied at agreed mesh for bakery and seasoning. Steam sterilisation is available for sensitive markets.
